
Our course in Marrakech grew out of a deep love for the beautiful city and the many fascinating people we have met along the way. The course focuses on the joy of food, craftsmanship, culture, architecture, artisanry, folk high school togetherness and unforgettable experiences.
Apart from a single day trip, the whole course takes place in magical Marrakech in Morocco, together with your course leaders, principal Anna Katrin Nørgaard, who has run a number of courses in Marrakech, and chef Dominique Capel, who has bought a riad in Marrakech which he will show you and tell you about. It is also in his own riad that Dominique will teach the participants all the secrets behind Moroccan cuisine, for which he has a great love.
On the course there will be everything from Moroccan cooking with Dominique and a street food tour through the souk, to going out to meet local craftspeople and attending a cooking school at Claus Meyer's Melting Pot.
The course includes an exciting day trip where we head out of Marrakech towards the beautiful Atlas Mountains and get to experience life in the countryside. Here we will bake bread with the local women in the traditional way. We will also take you to Claus Meyer's project in Morocco, the Melting Pot Foundation, where they help young people get ahead through gastronomy, and then, both with us and on your own, you will go out to eat at lovely restaurants – we give tips on the good places.
You will get to explore alone or in small groups, according to your needs, in the winding streets of the medina and the souk. Here you can shop away, visit one of the historic palaces, or you can go to a hammam and get a proper scrub and massage, and then afterwards enjoy a nous-nous with a view over the lively city.
We are really looking forward to showing off the city, and hope we can pass on some of our fascination to all of you who travel with us on an adventure.

9.00 Communal breakfast. We give tips and tricks for the medina/souk. How do you haggle over the price, what about tipping, and so on.
10.00 Talk on Morocco's society, culture and food traditions with Anna and Dominique.
11.00 Food tour: We split into 4 smaller groups and go on a food tour with local guides, tasting our way through the souk.

17.30 Talk with Dominique – how did he end up in Marrakech? Anna interviews Dominique.
19.00 Dinner at our riad/folk high school.
Evening get-together and a talk about all the many treasures you can buy in Marrakech, as a lead-up to the trip we are making tomorrow afternoon with Dominique to selected places. We will talk about spices, rugs, baskets, ceramics, and how you can have anything custom-made to your exact wishes. Whether it is tailored clothing or furniture for the house. There is nothing that Dominique cannot get sorted in Marrakech.
Day 3: Wednesday 17.3: Moroccan cuisine with Dominique, cycling with Anna

10.00 - 13.00 Group 1 (8-9 people) goes into the kitchen with Dominique at Dominique's own riad, a 1-minute walk from the folk high school. Now a lovely Moroccan lunch is to be made for everyone.
10.00 - 13.00 The rest have two options:
1: Go with Anna and a cycling guide to cycle in the medina.
2: Free time on your own for shopping, museum visits etc. Dominique and Anna have made a list with recommendations for places to shop and places to experience.
13.00 Lunch for everyone, which group 1 has made for us. We have it on the roof terrace at Dominique's riad.
14.00 - 17.00 A trip with Dominique to selected places where he buys things for his riad, works with local craftspeople etc.
17.00 - 18.30 Cake and tea + talk: Dominique tells us and shows pictures from the project of buying a riad and getting to grips with the rules and legislation on property purchase in Morocco. Then finding the right craftspeople and getting the house renovated in a completely foreign country with a completely different work culture.
Dinner today is on your own. We have already given tips on good restaurants that we ourselves love to go to.
Day 4: Thursday 18.3: At Melting Pot – Claus Meyer's cooking school in Marrakech

8.45 Communal breakfast.
9.30 Today we are going to a cooking school at the super exciting project Melting Pot Foundation, which is run by Claus Meyer and supported by the Danish-Arab Partnership Programme under the Ministry of Foreign Affairs. At Melting Pot we meet Danish Marie-Sofie Grønlund, who is the day-to-day manager of the project. She tells us about the project and the idea behind it. We will go into the school kitchen and cook together with the young Moroccan students, who are all training to be chefs. Together we make a delicious 3-course menu of modern Moroccan food.
After lunch there is coffee, and we hear Marie-Sofie's exciting and personal story of how she experiences living in Morocco after several years in the country.
16.00 Back at the folk high school.
16.00 - 19.00 Free time on your own – opportunity for a trip to the hammam, a museum, or just relaxing at the folk high school.
19.00 We all go out to eat at a restaurant (included in the price).
Day 5 Friday 19.3: Cultural encounter, Moroccan cuisine, a trip to Gueliz
8.00 Opportunity to join a morning walk with Dominique and Anna. A morning walk Dominique loves to take with his wife when they are in Marrakech.
9.00 Communal breakfast.
10.00 - 11.30 Danish-Moroccan cultural encounter: We have invited our Moroccan friends Rachid and Hind, a younger couple with a 6-year-old son, to visit the folk high school for cake and tea and a chat about daily life in the red city, which is growing and growing, and which has a huge increase in the number of tourists visiting. What do they think about the city's development, and what dreams and plans do they have for the future? We sing a couple of songs from the folk high school songbook for the Moroccan couple.
12.30 Lunch
14.00 Group 2 goes to the market with Dominique. Then a break, and from 16.00 group 2 goes into the kitchen at Dominique's own riad, a 1-minute walk from the folk high school. Now a lovely Moroccan dinner is to be made for everyone.
14.00 - 19.00 The rest now have 2 options.
1. Offer: Go with Anna on a trip to the French-built district of Gueliz with its wide boulevards and its many art experiences.

Day 6 Saturday 20.3: A trip to the Atlas Mountains with the Berber woman Saida
8.30 Communal breakfast.
9.30 Today we are heading out of the city – on a full-day excursion to a small mountain village in the Atlas Mountains. We meet the enterprising businesswoman Saida, who is also from a Berber family. The Berber people typically live in the Atlas Mountains. We start by baking bread with the local women. Then we eat a lovely lunch. Once we have eaten, we walk with Saida for about 40 minutes up a small narrow and stony mountain path to her village, to see how people live here in the old houses and hear about life in the village. We also see the old olive press and a weaving workshop where they make rugs to order. Remember sensible footwear for the day's walk.
Around 16.30 Departure towards Marrakech.
19.00 Dinner and get-together at the folk high school.
Day 7 Sunday 21.3: Last day – Moroccan cuisine, women's circumstances and time for a last bit of shopping, museum visits etc.

Meet your instructors
Dominique Capel:
Dominique was born and raised in Normandy in France – in a home where cooking played a big part. His mother made three courses for both lunch and dinner, and already as a child he stood at the stove peeling potatoes, stirring sauces and baking pancakes. At 8–10 years old he was often the one frying the steaks.
It was written in the cards that he would become a chef – and that the world was waiting. After graduating from the hotel and cooking school in Granville in 1983 and a year at a restaurant, he set off. London was the first stop, where he worked at large hotels in kitchen brigades of up to 25 chefs. A sense of adventure and curiosity has always driven him – inspired by his father's tales from the Marine Nationale and travels around the world.
Scandinavia drew him in early. A fascination with Nordic culture brought him to Denmark in 1990, where he worked in Copenhagen and later in Vejle – among other places at Munkebjerg Hotel, where over 16 years he held several management positions. In 2012 he helped start and develop Nicolas Vahé – a French-inspired "épicerie fine" brand with the craft of cooking at its heart.
A craftsman at heart
But Dominique is more than a chef. He is also a craftsman at heart. Since 2022 he has immersed himself in building, renovating and restoring houses – a passion that unites his sense of aesthetics, materials and good craftsmanship. So when he and his wife fell in love with Marrakech, it was only natural to throw himself into the work of restoring their riad – with respect for Moroccan building traditions, materials and customs.
In Marrakech, Dominique has found a place where his love of food, culture and craftsmanship melt together. Moroccan cuisine – with its spices, its slow cooking and its strong food traditions – speaks directly to his French chef's heart. At the riad he opens his own kitchen and invites you right up close to the ingredients, the techniques and the stories behind the dishes.
He describes himself as a nomad and a chameleon – curious about people, music, architecture and food. He thrives in the encounter with the local, in the conversations at the market and in working with his hands. He loves to teach, to share his knowledge and to watch good craftsmanship take shape – both in the kitchen and in building.

Founder and principal of Annas Højskole. Former documentary maker at DR. Anna has travelled quite a bit in southern Africa and in Tunisia, but when she experienced Marrakech for the first time in 2022, she was swept up in a fierce storm of love. What a beautiful city, what delicious cuisine, but most of all – what a wonderful people. Kind, welcoming and curious about you and your culture.
Annas Højskole has run courses here since February 2024, and Anna has since then gained a really good knowledge of Marrakech – and she is very much looking forward to showing you this beautiful city together with Dominique.
